Recipe Raspberry Cheesecake
Ingredients:
- 1 cup ricotta cheese
- 1 cup cottage cheese
- 1/3 cup granulated sugar
- 1/3 cup low fat yogurt
- 2 eggs
- 1 teaspoon grated lemon zest
- 1/2 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
- 1 1/2 teaspoon cornstarch
- 1 cup raspberries
Directions:
- Preheat oven to 350 degrees F
- In a food processor, beat together ricotta cheese, cottage cheese, sugar, yogurt, eggs, lemon zest and vanilla until smooth
- Beat in flour and cornstarch
- Transfer to a bowl; gently fold in raspberries
- Pour into prepared pan
- Bake 35 minutes or until a tested inserted in center comes out clean
- Cool on a rack, chill and serve
