Recipe Raspberry Cheesecake

Ingredients:


  • 1 cup ricotta cheese
  • 1 cup cottage cheese
  • 1/3 cup granulated sugar
  • 1/3 cup low fat yogurt
  • 2 eggs
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1 1/2 teaspoon cornstarch
  • 1 cup raspberries

Directions:


  1. Preheat oven to 350 degrees F
  2.  In a food processor, beat together ricotta cheese, cottage cheese, sugar, yogurt, eggs, lemon zest and vanilla until smooth
  3. Beat in flour and cornstarch
  4. Transfer to a bowl; gently fold in raspberries
  5. Pour into prepared pan
  6. Bake 35 minutes or until a tested inserted in center comes out clean
  7. Cool on a rack, chill and serve
